The best ice cream can transport you to another time and place, tip-toeing across taste buds and happy memories.


Never was that more true that when we took a bite of an ice cream treat inspired by Ben Bars, a special family dessert. One taste brought us back to weekends with all the cousins at our grandparents’ farm.


The culinary genius behind the ice cream is Naomi Sugar, a fellow ice cream blogger who is making a different flavor of ice cream every day and writing about it at www.365scoops.com. Check it out!


Sugar (yes, that’s really her name) offered to make a customized ice cream flavor at our request. We suggested using Ben Bars as an inspiration.


Ben Bars are one of the most delicious treats on the planet. They got their name because they were the favorite of my cousin, Ben Kotta, who sadly is no longer with us. To read more about Ben and his namesake bars, see a wonderful blog post his sister Jill wrote at www.cravingsustinance.com.


Ben Bars themselves are deceptively easy. They have only three ingredients: peanut butter, butterscotch chips and Rice Krispies. Melt the first two and mix in the third.


To turn them into an ice cream treat, Sugar shaped the Ben Bars into a dish using a bowl as a mold. Then she created a Peanut Butter ice cream using natural peanut butter. It adds little flecks of ground peanuts to the creamy base. She topped it off with a homemade butterscotch sauce.


The whole concoction is so good it should be patented. There is a saltiness to the butterscotch that plays off the sweetness of the ice cream. And the texture is divine with a crunchy bowl and creamy ice cream.
